Focus on ... Green Soy!
Our Chef Jean-Pierre is too strong… so many discoveries every week… just like the azuki last week, I think that green soybeans are as unknown to you as they are to me! Let's take this opportunity to expand our gastronomic culture ... And the next time it's on the menu, I promise I'll tell you about oat milk… smart question asked by a customer today…
Originally from India, green soybean or mung bean is a legume of the genus Vigna with small seeds of green color. It has been cultivated and eaten for over 3000 years in the plains and up to 1800 meters above sea level on the north-western slope of the Himalayas. Around 1900, its culture extended from Japan to Greece. Since, this species has spread all over the world. It is a common ingredient in Asian cuisine. Mung beans have specific and extra-ordinary nutritional benefits : they are rich in protein and fiber. Their composition is similar to other pulses (lentils, chickpeas, white / red beans, etc.): little fat, lots of protein (25%) of good quality, starch, fibers and abundant micro constituents ( minerals, vitamin B9 +…). Their omega 3 fatty acid content, close to that of yellow soybeans: 1g / 100g (1 portion 50g = 25% of the recommended intake) is 10 times greater than that of other legumes. In conclusion, it is an excellent ally of slimming diets!

After the company cocktail on the terrace last summer, we hosted a Galette des Rois in the Winter Garden, privatized for the occasion, with 50 people, last Friday.
A beautiful festive and friendly moment during which everyone was able to listen to the presentation in good conditions and then share bubbles… in the Saumur region of course!
