Focus on ... the Indian Dal
The word dal in India and Nepal designates several lentil-type legumes. By analogy, it is the name given to a Indian dish made from legumes. It is also spelled dahl, dhal or daal, from the Sanskrit term "to separate". In fact, legumes are often shelled (or de-skinned) to be transformed into flour, pancake or puree. We also give this name to the thick and spicy Bengali soup or stew prepared from dal… that's what we have concocted for you… In India, we know more than 50 varieties of legumes. The most famous dal are: • Toor dal or tur dal, a small broken lens that is yellow in color. • Kala chana, a kind of chickpea with brown skin. • Mung dal or moong dal, very popular, green or yellow in color. • Urad dal, white and very small, broken and flattened. • Masoor dal, coral red lens. • Rajma dal, red bean (kidney-shaped, hence the name kidney bean), also popular in Latin America and the Caribbean.
Our Dal is made with coral lentils and the Chef's cocktail of spices with 12 flavors topped with a melted Galet de Loire ... A pure delight!

After 9 months of intense activity within the Carré, we arrive at 9 * 4 = 36 weeks of creativity with 10 dishes per week ... which gives a rounding of 320 different dishes that you could taste! (because there were double weeks with holidays and Best Of weeks)… and 28 newsletter… We therefore decided to overload your mailbox, thinking that a 2 week rhythm for the change of menu and for the newsletter is sufficient…
Our newsletter will therefore be a bit more desired and you will always be as welcome every week, always offering you the opportunity to taste all the dishes that tempt you!
