Focus on ... the Carrot!
I find it fun to zoom in on everyday products that we don't know that much after all!
Carrots are one of the most common vegetables and the second most consumed in France after tomatoes. It is subject to many sayings and proverbs, it is even sometimes called the stingray. It is in season… all year round! The early carrot is picked young between April and July. It is relayed until October by the seasonal carrot. Then in autumn and winter, it is the turn of the storage or guard carrot.
History… Its country of origin is ... Afghanistan, where it is adorned with purple, black red, pale yellow ... Although appreciated for their flavor, these carrots had the drawback of too coloring the broths and sauces. Also the orange carrots obtained in Holland from 1600 knew an immediate success. The current varieties derive from this vegetable revolution!
Long live carotene and fiber! The carrot is characterized by its high content of provitamin A or carotene, which is what gives it its color. Carotene has many properties, in particular, it is involved in the good condition of the mucous membranes, skin and twilight vision. Likewise, it promotes actions against blood cholesterol levels, the development of atherosclerosis, cell aging and stimulates immunity. Some studies have shown that thanks to this, 100g of carrots per day can halve the risk of lung cancer. Fibers are also particularly abundant there
Younger, more tender and less sweet! Energy intake is moderate: 33 kcal / 100g, like most root vegetables. The carbohydrate content increases as the vegetable matures. As a result, young carrots are more tender but less sweet.
