Definitely, even for his last menu, our super Chef Sébastien will introduce us to new flavors and new products. He's really too strong. In recent years, this green cereal with a smoky taste, originating in the Middle East, is showing the tip of its seed on gourmet tables and its nutritional qualities are proving to be much more interesting than those of rice. What is Freekeh?
Also called frikeh, frik or farik, freekeh belongs to an ancient variety of green durum wheat that appeared in the XNUMXth century in the Fertile Crescent region of the Middle East. Its particular color is explained by the fact that the ears are harvested before they reach maturity. Once picked, they are then burned with a torch or a wood fire in order to easily remove the husk from each seed and give it that particular smoky taste.

His origin ?
For Roï Hendel, head of the Parisian house Épices Shira: “In the past, when the end of spring came, there was often a shortage of wheat… there was no longer anything to eat. The peasants had found a trick to be able to eat wheat before it was ripe. Mown milky (still green), the piles of ears were then burned in order to detach the grains stuck inside the husk, then the wheat was threshed to recover only the grains. Like many dishes born from a constraint, this preparation has continued and today we continue to consume freekeh for taste. "

Harvesting takes place in June, on a very specific day when the wheat is neither too green nor too hard, and only certain "elders" are authorized to start the picking.

Beyond the plate, the freekeh accumulates the benefits. This cereal has a high content of fiber, protein and minerals, which consequently regulates the blood sugar level and improves the feeling of fullness. Only downside, with all due respect to the intolerant, this seed contains gluten. It is eaten and cooked like rice or other classic cereals.

Finally, even in this area, beware of counterfeits! "Below 2 to 4 euros per kilo, you will not have freekeh but smoked bulgur to which we have added food coloring." To recognize the real cereal, two precautions must be taken: the raw grain must be tender in the mouth and the cooking water must be cloudy to gray but not green.

The Harvest Festival!

Since the Château de Saumur found vines, the harvest has been celebrated there every year. On the program: grape pickers' snack, musical harvests, pressed, grape juice tasting, wine brotherhoods, gourmet market, giant picnic, shows, entertainment, not to mention a visit to the castle.
