February… A month that I particularly like. It's a nice little month that is discreet during the year with fewer days than the others but which imposes its singularity by creating leap years ... a real personality! February is also the month of lovers… To which we have decided to give pride of place this year with “all-inclusive” boxes and a beautiful decoration in the hotel… RV in the News and Zoom for all the details… Finally, I must admit that it is the month of my birthday, so maybe we also always like the month of our birth a little more?

Well in this February 2021, our Chef Sébastien offers us a real festive menu ... not those at the end of the year, but celebration of spices and flavors with compositions that are still as learned. I'll let you discover it below.

zoom of the week

Today is the big comeback of the Zoom on the products of the menu… and I was not satisfied with a zoom but with five, so much this menu inspires us! Small zooms therefore but which still cultivate us as much ...


Turmeric is used as much as spice as a coloring in food preparations. It is also one of the main constituents of curry, a mixture of spices particularly used in Indian cuisine.
This spice has been used for millennia by Indian medicine, known as Ayurvedic. But turmeric is arousing the interest of researchers today. For its digestive properties, of course, but also for its ability to reduce inflammation, prevent cancer and protect the brain from Alzheimer's disease.

Lemongrass : Citronella is a common name given to several herbaceous plants whose leaves recall the smell of lemon like those we know well: Lemon verbena, Lemon balm etc. Lemongrass pairs well with ginger, coconut, garlic, shallot and chili, making it essential in Thai and Vietnamese cuisine where it pleasantly perfumes soups, curries, sauces and fish. It can also be used as a refreshing tea.

The Combava is a ancient citrus small in size that looks like a lime and is often confused in appearance with bergamot. Its taste, however, has nothing to do with the latter: its powerful and intense aroma is reminiscent of lemongrass, ginger and coriander. Also called makrut, lemon combera, kaffir lime, it is thought to be native to Indonesia.

Soybean: The name "edamame" comes from the Japanese word "eda" (branch) and "mame" (bean). This amazing vegetable harvested from branches looks like a plump snap bean in which small soya beans have formed. Immature, these little beans are green, tender and crunchy. In Japan, they are somewhat the equivalent (and healthier!) Of our peanuts as an aperitif: they are eaten just salted and accompanied by a beer. These beans are rich in quality protein and iron, two interesting elements for vegetarians.

Tonka beancitronella

The Tonka Bean: with aromas that navigate between the caramel, vanilla and coffee, the tonka bean is a little gem often complementary to chocolate.
The tonka bean comes from a tree whose hardwood is marketed as “teak”. This tree, native to Venezuela and Brazil grows in tropical environments and produces a fruit whose shape is reminiscent of mango.
