Focus on ... Green Soy

We think we know him but not at all! Green soya deserves to be discovered and tasted… obviously at SQUARE!

Native to India, green soybean or mung bean is a legume of the genus Vigna with small seeds of green color. It has been cultivated and eaten for more than 3000 years in the plains and up to 1800 meters of elevation on the north-western slope of Himalayas. Around 1900, its culture extended from Japan to Greece. This species has since spread around the world.

It’s a common ingredient in Asian cuisine. Mung beans have specific nutritional benefits: they are rich in protein and fiber. Their composition is similar to others dried vegetables (lentils, chickpeas, white / red beans, etc.): little fat, lots of good quality protein (25%), starch, fibers and abundant micro constituents (minerals, vitamin B9 +, etc.). Their omega 3 fatty acid content, close to that of yellow soybeans: 1g / 100g (1 portion 50g = 25% of the recommended intake) is 10 times greater than that of other legumes. In conclusion, it is a excellent ally of slimming diets !
