Zoom on… Combier Distillery
FINALLY, I can zoom in on the Triple Sec and this beautiful Saumuroise house that is the Combier Distillery ...
COMBIER is the oldest distillery of the Loire Valley still in activity and is now ranked " Entreprise du Patrimoine Vivant ". In 1825, Jean-Baptiste COMBIER and his wife Joséphine Destre arrive from Burgundy and settle on rue Saint-Jean to open a confectionery. Saumur is not chosen at random. The city already has a long experience in liqueurs with a climate conducive to fruit growing.
Two years after founding the present society, JB Combier invents a liquor made of sweet and bitter orange peel, distilling his "spirits" three times in a row; liquor that he will name: " TRIPLE SEC "(today" The Original Combier ").
Today, the company has retained its character and continues to manufacture its liqueurs according to same recipes and the same manufacturing processes as in the nineteenth century, only guarantees for a quality product. As proof, the magnificent room of copper stills where the smell of orange reigns at each distillation ... These rare stills from 1901 have taken up residence in this Eiffel architecture room which dates from the early twentieth century also ... it is another witness of the Eiffel structures in the blink of an eye to our Winter Garden (well, it gives me the idea to make it next Zoom).
Today, the Combier Distillery produces liqueurs, syrups, gins, absinthes and fruit creams, always on the historic site in the heart of Saumur.
The distillery is open to visitors all year round by reservation. Here you can learn the secrets of making Combier liqueurs and the fabulous history of absinthe.
The Original Triple Triple Combier
The ebitter orange peel and sweet oranges of the Triple Combier Original Dry are still sourced from Haiti. Developing Triple Dry at Combier requires a lot of manpower.
The steps are as follows: 1. Rehydration of orange peels 2. Zestage of the bark: manual operation where each bark is passed one by one in a notch behind which a blade will separate the peel (flavedo-the good part of the bark) of the white inner part (the albedo) 3. Maceration of these zests in neutral alcohol for a few days 4. Distillation of bark 5. Mix distillates and sugar, water and alcohol to obtain a liquor 40% vol. without addition of flavorings
Added to many pastries or desserts (pithivier, soufflé, fruit salad ...), it allows to give them a unique taste. Try them too cocktails, original or classic, success and surprise of your insured guests!
- Combier Margarita : 2cl The Original Combier, 4 Cl of Tequila, 1cl of Lemon Juice Pressed - Orangette : traditional candied orange confit coated with chocolate revisited in cocktail: 2cl L'Original Combier, 4cl White cocoa cream, 1cl cocoa spirit, 2cl Pressed orange juice, 2 and pressed lemon juice - Fragola Spritz : discover the strawberry differently and be in the fashion of Spritz: 6cl Crémant de Loire, 2cl pure madness liquor (strawberry), 2cl The Original Combier, 2cl sparkling water
